Ingredients
1 English cucumber, ends trimmed and halved crosswise
1/2 cup caramelized onion hummus
4 slices less sodium deli turkey, each cut crosswise into 6 (¾-inch thick) slices
3 slices ultra thin Swiss cheese, each cut crosswise into 8 (½-inch thick) slices
Directions

1. With vegetable peeler, cut cucumber halves lengthwise into 24 thin ribbons; pat ribbons dry with paper towel.

 

2. Spread about ¾ teaspoon hummus over each cucumber ribbon; top with turkey and cheese. Roll up cucumbers around filling.
